I’m not panicking though with some mince meat, cream and cheese, the leeky pot will only lead to filled humans 🙂
- 500g of organic mince meat
- 2 organic leeks
- 200ml of organic cream
- 100g of soft cheese like camembert or brie
- 1 tbsp of organic butter
- salt, pepper and nutmeg to taste
- 1 1/2 cups of organic rice (optional)
If you are after some carbs, pop the rice on the stove or in a rice cooker.
Once that is sorted toss the tbsp of butter into a large saucepan. When it is melted and starting to brown add the mince meat. Whilst the meat is cooking, chop up the leeks to about half a cm thick slices. Make sure you wash them once they are chopped or else you will most likely end up with a very sandy meal. ( I speak from experience 😀 )
Fry the meat until it is half cooked and then add the chopped up leek. Season with salt, nutmeg and pepper to taste. Cook for about 15 mins stirring occasionally.
Cut the soft cheese into rough cubes. When the leek is all lovely and soft and the meat is cooked, add the cubed 100g of soft cheese. Last but not least, add the cream and let everything simmer for 5 minutes. You should be left with a yummy creamy saucy kinda dish.
It’s really tasty served with some rice and of course chilli flakes on top. But honestly, just as good without the rice and then as keto/low carb as can be!
